These were delicious and I actually felt good after eating one, bonus!
Blueberry Muffin Tops
a healthier blueberry muffin top.
1 C whole wheat flour
1/2 C oatmeal
1/4 C sucanat
1/2 tsp. baking powder
1/8 tsp. sea salt
1/4 C coconut oil melted
1/2 – 3/4 C milk ( I used coconut milk)
1 C blueberries
Mix ingredients in order just until combined. Fold in 1/2 blueberries. Drop into muffin top desired size on parchment lined/silpat lined baking sheets. Bake about 15 minutes at 400 degrees or until set. Remove and cool on baking sheets for 5 minutes before removing.
