Blueberry Muffin Tops

These were delicious and I actually felt good after eating one, bonus!

Blueberry Muffin Tops

a healthier blueberry muffin top.


  1. 1 C whole wheat flour
  2. 1/2 C oatmeal
  3. 1/4 C sucanat
  4. 1/2 tsp. baking powder
  5. 1/8 tsp. sea salt
  6. 1 egg
  7. 1/4 C coconut oil melted
  8. 1/2 – 3/4 C milk ( I used coconut milk)
  9. 1 C blueberries


  1. Mix ingredients in order just until combined. Fold in 1/2 blueberries. Drop into muffin top desired size on parchment lined/silpat lined baking sheets. Bake about 15 minutes at 400 degrees or until set. Remove and cool on baking sheets for 5 minutes before removing.
