Chocolate Peanut Butter Banana Baked Oatmeal

a delicious and healthy breakfast idea!


  1. 2 large bananas, mashed and melted
  2. 1 tsp vanilla
  3. 1/3 C peanut butter or other nut butter
  4. 1 egg
  5. 1 C plain yogurt
  6. 2 C milk (I used 1 C coconut and 1 C 2%)
  7. 1 TB coconut oil melted
  8. 6 C oats
  9. 4 tsp chia seeds


  1. Mix ingredients in order, make sure the banana mixture is not too hot when you add the egg or you will scramble it šŸ™‚ I usually solve this problem by adding the cold yogurt/milk to the banana before the egg.
  2. Pour in greased 9 x 13 pan and either refrigerate covered overnight or bake in 375 degree oven for 15 minutes. Lower temp to 350 and bake for about 10 more minutes or until set. Warning, your house will totally smell like you are baking brownies. Leftovers can be frozen after baked or refrigerated and reheated in microwave.
