Blueberry Crunch Coffee Cake

Ingredients

  1. Batter:
  2. 1/4 c. butter or margarine, softened
  3. 3/4 c. sugar
  4. 1 egg
  5. 2 tsp. baking powder
  6. 2 c. flour
  7. 1/4 tsp. salt
  8. 1/2 c. milk
  9. 2 cups blueberries
  10. Topping:
  11. 1/2 c. sugar
  12. 1/4 c. butter or margarine, softened
  13. 1/3 c. flour
  14. 1 tsp. cinnamon

Directions

  1. Mix butter and sugar until light and fluffy. Add egg and mix well. Add the dry ingredients alternately with milk until just blended. Carefully stir in blueberries. (Batter will be on the stiff side.) Pour into greased 9×9 baking pan. Combine topping ingredients until mixture resembles crumbs. Sprinkle on top of batter and bake at 375 degrees for 40 – 45 minutes.
