Baked Oatmeal Variations

This is the very first entry of my new website.  I am excited to be able to share money saving tips, recipes, and all sorts of fun information.  Here is the actual reason for me starting the new site:  It is all about the oatmeal.  I feel like I should preface this with a little background for the famous oatmeal…

My sister in law Candace is the one who gave me this recipe.  It is delicious in its original form.  I love the mix of apples and cinnamon with the dried cranberries.  It is for an 8 x 8 pan and I use a pyrex glass pan and it is FULL, but it bakes beautifully.

Now, if you want to double the recipe just put it in a 9 x 13 pan and slightly adjust the baking time until the center is set but the edges aren’t too browned.

IF, you desire to quickly bake the original recipe, just put it in a 9 x 13 pan and it will not be so full, and the thinner oatmeal will bake a bit quicker.

Here it is, the original, yummy breakfast of champions and oatmeal lovers everywhere…

Baked Oatmeal

Apple Baked Oatmeal


  1. 1/2 C oil
  2. 3/4 C sugar
  3. 2 eggs
  4. 3 C quick oats
  5. 2 tsp baking powder
  6. 1/2 tsp salt and cinnamon
  7. 1 C milk
  8. 1 apple peeled and chopped
  9. 1 C coconut
  10. 1 C craisins


  1. Beat together 1st three ingredients. Add remaining, mix well. Add apples, coconut, craisins last. Pour into greased 8 x 8 and bake at 350 for 30 min.
