Well I am super pumped. I made a new recipe for dinner tonight and it was kid and Husband approved! For the record it was also grandpa, grandma, aunt, uncle and cousin approved. Basically you make a taco type ground beef mixture (I bet ground turkey would be good too or even a combo of lean beef and turkey,) and fill it with veggies and top with cheese and a cornbread batter layer. The cornbread bakes on the top so add a green salad and you have got an complete meal. So good and freezes beautifully. The recipe was based on this one. cowboy dinner recipe
I added the salsa and thought tomatoes would have been good also, or even tomatoes with green chiles if you like some heat. I totally forgot the cheese and we did not miss it. I tried to sprinkle some shredded cheddar on top to see if it was better and we liked it either way. Top with a dollop of sour cream or plain yogurt if you like and enjoy! Sliced avocado, cilantro, fresh salsa, all would have been delicious toppings but we were too busy eating to stop and try them
. Feeds 6 adults, 1 five year old, 1 three year old, 1 two year old, and 2 one year olds with enough leftover for 1 piece for lunch the next day.
